Preparing the Ingredients for Saffron Honey Cake:
Before mixing and beating the cake ingredients, if your flour is not cake flour, it is usually passed through a sieve or mesh three times to ensure it is well-aerated. This helps prevent lumps in the cake.
1- Whisking the Eggs:
In the first step, we whisk three eggs thoroughly, either with an electric or manual whisk, until they are completely light and fluffy.
2- Adding Yogurt:
You can start by adding the yogurt. A question might arise: why do we use yogurt? Because it helps the cake have a softer texture when we add honey. After adding the yogurt and mixing,

It is best to use a solid or semi-solid oil. If not, you can use softened butter at room temperature. However, you can also use cooking oil for this cake.
4- Adding Honey:
In the fourth step, we proceed to add the honey. After mixing thoroughly with the previous mixture, add the flour and beat for about 30 seconds to 1 minute.
Tip: You can use other natural sweeteners, such as date syrup or grape syrup, instead of honey.
5- Adding Flour:
After adding the flour, we mix it well until there are no lumps. You can add baking powder before adding the flour. The most important thing in this step is to mix the ingredients well until they form a smooth batter.
Tip: The amount of flour should be adjusted depending on the size of the eggs. If the eggs are larger, add one or two tablespoons of flour, and if the eggs are smaller, reduce the flour by one or two tablespoons. The key is to achieve a smooth batter texture.
6- Adding Saffron:

Tip: If you have used date syrup or grape syrup, you don't need to add saffron because they are darker. In this case, you can use vanilla extract as a flavoring.
In this step, it's time to pour the liquid into the cake pan or mold. Before pouring the saffron-honey cake mixture, you need to grease the pan to prevent the cake from sticking.
Tip: If you want your cake to be two-toned, you can pour two-thirds of the liquid cake mixture into the cake pan and then mix the remaining one-third of the cake mixture with cocoa powder and carefully pour it over the previous mixture. You can also do this in half, depending on your preference. Usually, pouring two-thirds creates a more beautiful effect because the cake mixture sometimes seeps into the lower part of the pan, which can diminish its beauty.
Place the cake mixture in the oven for 20 minutes. If possible, place it in the middle rack for even baking and to prevent the top from browning too quickly.
Tip: Do not open the oven door during baking to allow the cake to rise properly.
